Warwick Valley Winery and Distillery - it's in the Hudson Valley foothills - is known for Doc's Draft ciders, but they fool around with the hard stuff, too. The first distillery to be licensed in the Hudson Valley since Prohibition, it's bottling pear and apple eaux de vie and fruit cordials like sour cherry.
The season, however, just seems to beg for their new Bourbon Barrel Aged Apple liqueur ($15). With more than a hint of smoky caramelized apples, a glass is a sensual dessert on its own or - why not? - drizzled over a little ice cream.
Look for it at shops like Astor Wines, Vintage New York, and Red, White and Bubbly in Brooklyn. -Rachel Wharton
